Rarebit a la Mexicana

Gebhardt’s of San Antonio was the first commercial producer of chili powder. It showcases its popular spice in this version of Welsh rarebit.

2 tablespoons butter
2 cups grated cheese
1 cup corn
1 green pepper, chopped
1 egg, beaten
1 teaspoon salt
1 teaspoon chili powder
1/2 cup tomato soup or purée

Melt butter in saucepan, add cheese and stir over a low flame until cheese is melted. Add corn, pepper, egg, salt, chili powder and tomato soup and cook until thick and creamy, stirring constantly. Serve at once on toast.
