Healthful, Hearty Lentils Help Warm up Winter

Oh, these cold and rainy days. We don’t like to have to drive around town, but I’d bet plenty of us feel like cooking something comforting.

This week, we turned to one of our favorite legumes, lentils, to make dishes that were warming as well as delicious.

On one rainy day recently, after driving from my home in the Jefferson area to Stone Oak and Huebner for an appointment,  I stopped at Green Fields Market to pick up green lentils and trimmed beef short ribs. The dish, Braised Short Ribs with Lentils and Winter Vegetables, came out well, the product of an afternoon spent traveling back and forth from my warm kitchen to a warm corner of the living room with a book.

For me, an afternoon like this is close to heaven.

    I love lentils, too – for me, browning a beef shank and some lamb makes the basis of a great lentil soup.
