Chocolate Almond Cookies

This recipe comes together quickly and isn’t overly sweet. Instead, it lets the chocolate and the nuts do the talking.

Chocolate Almond Cookies

½ cup (1 stick) margarine or butter, at room temperature
½ cup shortening (see note)
1 ½ cups sugar
1 egg
1/4 cup water
1 teaspoon almond extract
3 cups rolled oats or old-fashioned oats
1 cup flour
1 cup slivered almonds
1/3 cup cocoa powder
½ teaspoon baking soda
3/4 teaspoon salt

Preheat oven to 350 degrees.

Note: I used 2 sticks of butter instead of margarine or shortening, and the recipe came out fine.

Mix margarine, shortening, sugar, egg, water, almond extract, oats and flour, preferably with your hands. Using a wooden spoon will take more time and may not result in the ingredients mixing as thoroughly. Add almonds, cocoa powder, baking soda and salt and mix with a spoon until thoroughly incorporated. Mix well. Drop dough by rounded teaspoonful onto baking sheet.

Bake for 10 minutes. Let sit for 2 minutes before removing from baking sheet onto rack to cool.

Makes about 5 dozen cookies.
