Celebrate Summer with Tasting Menu at The Lodge

Through Saturday, sample a new prix fixe, summer tasting menu with a glass of wine at The Lodge at Castle Hills, for $35.

The five-course menu starts with braised Snake River Farms Pork Belly with Fresh Corn Polenta, Sofrito Marmalade, Cayenne Syrup and Micro Cilantro.  The second course salad is Hearts of Palm and Baby Beets with Marcona Almonds, Baby Arugula,
Texas Grapefruit and Ruby Red Gel.

The third course is Pan-seared Atlantic Salmon with Tomato-Garlic Ragout, Preserved Lemon,
Baby Turnips and Sauce Gribiche; fourth course is Cast Iron Seared Beef Tenderloin with Brussels Sprouts, Onion Petals,
Potato-Pepper Brunoise and Sauce Blanquette; and dessert is Crème Fraiche Cheesecake with Pine Nut Praline,
Strawberry Consommé,” and Micro Cilantro.

    Bonnie – Steve and I went to the Lodge last Sunday for their “Study of Lobster” dinner. One of the courses was a lobster salad with candied celery. I have looked all over the web and am unable to find a recipe. Do you think that Chef Dady would be willing to share his recipe??
