Relax with a Pimm’s Cup

A Pimm's Cup

This British cocktail has long been a favorite in New Orleans. It’s quite refreshing on a hot day.

Pimm’s Cup

2 cucumber slices, divided use
4-8 ounces ginger beer or ginger ale, to taste
2-4 ounces bitter lemon soda, optional (see note)
1-2 ounces Pimm’s No. 1

Mix Pimm's No. 1 with ginger ale for a Pimm's Cup.

Place a cucumber slice at the bottom of a highball glass. Fill glass with ice. Pour in 8 ounces of ginger beer and lemon soda, if using, in the combination of your choosing. Top with Pimm’s. Stir. Garnish with remaining cucumber slice.

Note: Do not use Sprite, 7-Up or another sweet lemon-lime soda. Look instead for something like San Pellegrino Limonata.

Makes 1 cocktail.
