Green Apple Coleslaw
3 cups cabbage, finely shredded (bagged works fine)
2 cups Granny Smith apples, julienned (peeled or not peeled)
1/2 cup chopped fresh parsley
1/2 cup heavy cream
1/4 cup mayonnaise
3 tablespoons apple cider vinegar
3 tablespoons sugar
1/2 teaspoon kosher salt
Black pepper, to taste
In a large bowl, toss cabbage, apples and parsley together. Whisk together cream, mayonnaise, vinegar, sugar, salt and pepper. Pour over cabbage mixture.
Makes 4 to 6 servings.
