I like the blend of holiday flavors, usually found in sweet sauces and relishes, in this spread. The orange juice and wine add flavor, the white pepper adds some zing. Serve with crostini, sliced baguette or crackers.
White Cheddar Cheese and Cranberry Spread
6 ounces grated white Cheddar cheese
4 ounces cream cheese
3/4 cup dried cranberries, coarsely chopped, divided
2 tablespoons orange juice
2 tablespoons dry white or rosé wine
1/2 cup toasted, chopped pecans
2 pinches (1/4 teaspoon) medium grind white pepper
Pinch kosher or sea salt
Put cheeses, 1/4 cup of the chopped cranberries, orange juice, wine, pecans, white pepper and salt in a bowl and mix together gently but thoroughly. Fashion into a ball or a log and roll in the rest of the chopped cranberries. (If you wish, you can also add more chopped pecans to the cranberries for rolling.)
Makes an approximately 12-ounce cheese ball.
