Here is a recipe featuring two of our favorite flavors: peanut butter and chocolate.
These delectable cookies have no flour, and therefore are friendly for those who have to avoid gluten. And, we must say, pretty good-tasting cookies for the rest of us, too!
Peanut Butter Chocolate Chip Cookies
1 cup salted natural/organic chunky peanut butter
3/4 cup organic whole cane sugar or sucanat
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 cup dark chocolate chips or chunks of good, organic dark chocolate
Preheat oven to 350 degrees and adjust rack to middle position. Stir together all ingredients until incorporated. Spoon cookie dough using a 1 1/2-inch cookie scoop onto a baking sheet lined with parchment paper. Bake for 9 minutes. Store in an air-tight container.
Makes about 16 cookies.
