If you’re cooking on the grill and don’t have room or proper grill pan for a nice big batch of baby cremini mushrooms, here’s a quick way to do it under the broiler. These are great with anything off the grill, but especially with steaks, burgers and lamb. We found the baby cremini (which become portobellos when they grow up) at Costco.
Sizzled Button Cremini Mushrooms
2 pints button (very small) cremini mushrooms
1/4 cup olive oil
2-3 tablespoons dry red wine
Salt, to taste
Powdered red pepper, to taste (or other seasoning blends or herbs of your choice)
Coarsely ground black pepper
Heat the broiler in the oven. Wash the mushrooms, then pat dry with a dish or paper towel.
Put mushrooms in a bowl and add the olive oil, wine, salt, red pepper and a few grindings of black pepper. Toss everything well. Get a large, shallow broiling pan that will hold the mushrooms in one layer. Lift mushrooms out of the marinade and spread on the pan. Put the pan on the second level down from the hot broiler. This won’t take too long; when the mushrooms are sizzling nicely, shake the pan around once or twice to turn the mushrooms. Take them out in about 5-6 minutes, or until they’re tender but not dried out.
