Turkey leftovers don’t have to be the basis of calorie bombs. You can make a delicious turkey salad using the Shane Diet & Fitness Resorts’ approach, which mixes nonfat Greek yogurt with mayonnaise for a full-flavored dressing. You can also use this recipe with leftover chicken.
3 ounces of turkey breast, no skin
1/4 cup celery, chopped
1 tablespoon nonfat plain Greek yogurt
1 tablespoon mayonnaise
Salt, to taste
Pepper, to taste
2 slices onions
2 slices tomato
1 teaspoon dried cranberries
Dice the turkey breast.
Mix together with the celery and Greek yogurt. Season with salt and pepper.
Top with the onion and tomato. Sprinkle with cranberries.
Makes 1 serving.
