A three-cheese spread, to be served with crackers or spread on wedges of red pepper or celery, is a good snack, lightly spicy with a hint of garlic and plenty of blue-cheese flavor.
Almond Blue Cheese Spread
8 ounces cream cheese or light cream cheese, softened
1/2 cup sliced green onions or snipped chives
1/2 cup ricotta cheese
1/2 cup crumbled blue cheese
1/2 cup chopped toasted almonds
3 tablespoons chopped parsley
1 medium clove garlic, pressed through garlic press
1/8-1/4 teaspoon cracked or ground black pepper
2 dashes Tabasco sauce
Assortment of crackers or wedges of raw vegetables
Mix all of the ingredients together except crackers. Blend well. Chill 5 minutes or so. Serve with an assortment of crackers or use as a spread for raw vegetables.
