Groomer’s Seafood’s Lobster Mania is Aug. 1-3 (Thursday through Saturday) this year, and this is their recipe for a famous roll that can be enjoyed in many great variations.

Groomer’s Lobster Roll
¼ cup Kenko Mayonnaise (or your choice of mayonnaise)
2 tablespoons cilantro, minced
1 ½ cups lobster meat cut in chunks
½ cup chopped cucumber
½ cup grape tomatoes cut in quarters
1 tablespoon Meyer lemon juice plus sliced lemons for garnish
Sea salt, to taste
Cracked pepper, to taste
4 bolillos or other sandwich-sized rolls, cut in half
4 tablespoons butter, softened
Mix together in a bowl the mayonnaise, cilantro, lobster meat, cucumber, tomatoes and lemon juice. Season to taste with sea salt and pepper. Put in refrigerator to chill for at least 30 minutes to an hour.
Preheat a large (12- to 14-inch) heavy skillet over medium-low heat (a black cast-iron pan is perfect). Lightly butter both sides of each bun. Place them in the pan and cook cut side down for about 2 minutes or until crisp and golden brown. Turn the buns over and toast the other side lightly.
Stuff bolillos with desired amount of lobster mixture, garnish plate with lemon, if desired. Serve and enjoy!
