Enjoy the Sweet-Tart Flavors of Onions with Raisins (Oignons à la Monégasque)

These sweet and sour onions are an easy appetizer to put together, though peeling the pearl onions may take a little time. One taste will convince you the effort was worth it.

Onions with Raisins

Onions with Raisins (Oignons à la Monégasque)

1/2 cup tarragon vinegar
1 cup water
2 tablespoons white wine
4 tablespoons olive oil
2 tablespoons tomato paste
1/2 cup seedless raisins
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons chopped parsley
1 bay leaf
1 pound small white onions, peeled

Combine the vinegar, water, wine, olive oil, tomato paste, raisins, sugar, salt, pepper, parsley and bay leaf in a saucepan. Mix well. Add the onions. Bring to a boil. Cover and cook over low heat for 25 minutes, or until the onions are done. Serve as an hors d’oeuvre.
